1 box lasagna noodles
1 large container of cottage cheese
fresh fruit- e.g. Granny Smith apples, plums, apricots, raisins
3/4 pt. sour cream
1 t. Vanilla
3-4 T. Sugar
1 pinch salt
6 eggs
Cook the lasagna noodles.
Grease a lasagna pan.
Put down a layer of noodles on the bottom of the pan.
Then, cover the noodles with a layer of cottage cheese and fruit.
After you have two layers of cottage cheese/fruit, put down a final layer of noodles on top.
Then, beat together the sour cream, vanilla, sugar, salt and eggs.
Pour it over the top and let it seep through to the entire noodle pudding.
Top the pudding with cinnamon and nutmeg.
Bake at 350 degrees for 45 minutes.
This is like a sweet version of lasagna. It calls for lasagna noodles, but between the noodles you use cottage cheese and fresh fruit, instead of vegetables and marinara sauce. We traditionally eat it at holiday times, and it is delicious. When I was a child, it was my absolute favorite!
